First-time miso maker?
We recommend starting with "Rice Koji", "Medium", and "750 g".
This standard combination is ideal for beginners and provides a reliable point of reference. Once you've tried it, you can easily adjust the recipe to suit your taste.
Choosing your batch size:
We suggest starting with 750 g for your first batch. As you use it, you’ll get a sense of how much miso you tipically need over the course of a year.
Choosing the flavour:
Medium (Chūkara): A well-balanced taste with rich umami. 1.5 parts koji to 1 part soybeans.
Sweet (Amakuchi): A gentle sweetness with a mellow taste. 2 parts koji to 1 part soybeans.
Extra Sweet (Chō Amakuchi): 3 parts koji to 1 part soybeans. This special miso is rarely found in supermarkets though has become a recent trend. It offers a refined richness and natural sweetness from the koji.
